That was quite the break. But what better way to get back on the horse than by posting one of my very favorite recipes to share with all the (couple of) people who visit my blog?

This one is AMAZING. And it's my favorite for a reason. Ok, multiple reasons. Super easy, super tasty, incredible as leftovers, forgiving, easily doubled, the list goes on. I made it for dinner tonight and I kept pulling out new ideas for garnish; The Monkey Man ate until his stomach hurt. Bigs and Little refused to eat it at first -- as is their custom with anything that has been out of the meal rotation for too long -- but once they tried it (again) they were sold. Bigs even used her new favorite word to describe it: "EPIC!"

I'll take it.

Check it out! Mama Lionhttp://www.blogger.com/profile/14263210343396445798noreply@blogger.com0tag:blogger.com,1999:blog-471149568814497113.post-71860442016705437392013-08-20T17:56:00.000-07:002014-09-17T15:52:09.644-07:00French Toast Casserole a la Mama LionThis morning, while looking for something to feed the littles, I found a VERY stale loaf of french bread courteously left for us by a weekend guest! I was planning to slice it up and do french toast but it practically crumbled under the knife. Pulverizing it and bagging it up for bread crumbs was an option, but I'd had my heart set on french toast, so I did what I usually do in these situations. Google it! A few online recipes and personal adjustments later and VOILA! French Toast Casserole. The smell wafting through the house was intoxicating. Add fresh strawberries from our Tara Firma Farms CSA box and a drizzle of maple syrup and it vanished like a ninja at midnight.

Now, one of the key differences here for me is that most of the recipes I found call for bread cubes. They say nothing about the moisture content of the bread. Personally, I like my bread to be as dry as possible for french toast so that it can soak up lots of the egg/milk mixture. My mom does it this way, I do it this way, it works. This loaf had been sitting on the counter in an open bag for two days and it was on the verge of rock hard. If you don't have a loaf like that you can try to dry it out in the oven as though you were making croutons OR when you do have a loaf sitting around getting stale but you don't have time to cook, cube it up and freeze it for later.

I wish I'd taken pictures of the steps, but the finished product will have to be good enough!

5 cups bread cubes

4 eggs

1 1/2 cups milk

4 tablespoons sugar (I used maple sugar), divided

1 1/2 teaspoons ground cinnamon, divided

1/4 teaspoon ground nutmeg

1 teaspoon vanilla extract

1 tablespoon butter, softened

Directions:

1. Preheat oven to 350 degrees F (175 degrees C). Lightly butter an 8x8 inch baking pan.

2. In a medium bowl, beat together
eggs, milk, 2 tablespoons sugar, 1/2 teaspoon cinnamon, nutmeg, and vanilla. Mix the bread cubes into the egg mixture so they are completely covered; let stand for 10 minutes.

3. Pour the egg/bread cube mixture into the buttered dish and dot the top with the remaining butter. Combine remaining 2 tablespoons sugar with 1 teaspoon cinnamon and
sprinkle over the top. Bake in preheated oven about 45 to 50 minutes,
until top is golden.

4. Let cool out of the oven for about 10-15 minutes and enjoy!

This is amazingly delicious. Next time I might cover the dish with foil for the first 10 minutes and cook for an hour total. This would prevent over-browning while letting the dish cook a little longer to avoid mushiness.

Still, a total winner.

When the Monkey Man asked me what I'd like for my birthday I looked around and realized that the last thing I needed was more "things". So this year for my birthday I requested that people donate to my charity of choice, Charity:Water. I started a campaign so that people could donate in my name for my birthday:

http://my.charitywater.org/give-36-for-teals-36th

In case you don't know about Charity:Water, they are a great organization that actually makes a difference and does exactly what they say they do. Unlike some charities out there. I have to say, I got kind of a weak response, only three donations, but my campaign is running until Sept.30, so I'm hoping some people will still contribute! As they say, any amount helps.

Happy Birthday to me!
<span style="font-family: "trebuchet ms" , sans-serif;">You will find endless recipes for Pumpkin Pie Playdough on the web, but this little gem is my own version, not a copy and paste deal. The base recipe is from my daughter's preschool, I wish I could give credit to a specific person, but I don't know who wrote it. The rest of it is a result of my own experimentation.

<span style="font-family: "trebuchet ms" , sans-serif;">I get that the bright orange is a really fun playdough color, but I like my Pumpkin Pie Playdough to look like actual pumpkin pie, that creamy golden color with the little flecks of spice. It looks good enough to eat, and the smell is delicious, so make sure your kid is old enough to know not to eat it! On the plus side, the recipe is pretty benign so it probably won't hurt them if they do.

<span style="font-family: "trebuchet ms" , sans-serif;">Here we go:

<span style="font-family: "trebuchet ms" , sans-serif;">Mama Lion's Pumpkin Pie Playdough

<span style="font-family: "trebuchet ms" , sans-serif;">Mix together:

<span style="font-family: "trebuchet ms" , sans-serif;">2 1/4C Flour
1C Salt
2tsp Cream of Tartar

<span style="font-family: "trebuchet ms" , sans-serif;">Put on stove in large pot.

<span style="font-family: "trebuchet ms" , sans-serif;">Add:

<span style="font-family: "trebuchet ms" , sans-serif;">Color (mixed in water first) 25 drops yellow, 10 red, 5
green and 2 blue
<span style="font-family: "trebuchet ms" , sans-serif;">2C Hot Water
2 Tbs Olive Oil
<span style="font-family: "trebuchet ms" , sans-serif;">1 1/2 tsp cinnamon
<span style="font-family: "trebuchet ms" , sans-serif;">1/2 tsp ginger
<span style="font-family: "trebuchet ms" , sans-serif;">1/2 tsp nutmeg
<span style="font-family: "trebuchet ms" , sans-serif;">1/4 tsp
allspice
<span style="font-family: "trebuchet ms" , sans-serif;">(Or you can just add 2 1/2 tsp pumpkin pie spice)

<span style="font-family: "trebuchet ms" , sans-serif;"> Mix it all together with a fork until smooth.
<span style="font-family: "trebuchet ms" , sans-serif;">Apply the lowest heat possible and stir like crazy.
When thickened tip onto board and knead.

<span style="font-family: "trebuchet ms" , sans-serif;"><span style="font-family: "trebuchet ms" , sans-serif;">Tips:
I'd suggest using a
silicone spatula, scrape the pot really well during heating, and don't
take it off the heat until you have a real dough ball, not too mushy. If
it ends up being too sticky (sometimes the food coloring can do that)
add a little salt and a little flour while you're kneading until it gets
to the right consistency. Remember it will also get less sticky once
it's completely cool, but playing with it when it's warm is often the
best part of making it yourself :)
This is one of my favorite ever "got it off the side of a package" recipes. It was originally from the back of a Gold Medal Unbleached Flour bag, but the recipe they have on their website is slightly different.
<span style="font-family: "Trebuchet MS",sans-serif;">These are so good they disappear like your retirement account in 2008, (too soon?). Lucky for you when these disappear you can just whip up some more!
I went with the obvious (learned by experience) "Don't forget the rain fly", but then I saw someone posted this beauty and had to share it for anyone attempting spring camping. Wet wood and unexpectied rain is always a possibility this time of year so here is a great idea:

<span style="font-family: "trebuchet ms" , sans-serif;">"Waterproof strike anywhere matches by dipping the ends in melted parafin. You can get it at any craft store. Also best fire starter for any weather. Fill the individual sections of a cardboard egg container each with sawdust then pour in melted parafin to top. Seperate when solid. The cardboard from the egg container lights easily and the melting wax and saw dust make a nice little fire starter rain, shine or wind. Works like a charm!"

<span style="font-family: "trebuchet ms" , sans-serif;">

<span style="font-family: "trebuchet ms" , sans-serif;">So for most of you more organized people this may be a total no-brainer, but while reorganizing the bathroom the other night (another "I should be asleep but the kids are both down and I finally have time to myself" moment), I found an old piece of gingham ribbon and realized it would be the perfect way to organize all my daughter's clip barrettes! So simple, but really effective.

<span style="font-family: "trebuchet ms" , sans-serif;">

<span style="font-family: "trebuchet ms" , sans-serif;">3 easy steps:

<span style="font-family: "trebuchet ms" , sans-serif;">

<span style="font-family: "trebuchet ms" , sans-serif;">1. Find a ribbon you like, preferably one with body and at least 2 inches wide, and cut it to whatever length you need. Mine is about 12 inches. (Angling your cuts can make it look a little prettier)

<span style="font-family: "trebuchet ms" , sans-serif;">2. Stick it to your bathroom/bedroom wall with a tack (decorative tacks are nice if you have one).

<span style="font-family: "trebuchet ms" , sans-serif;">3. Clip your barrettes to it!

<span style="font-family: "trebuchet ms" , sans-serif;">

<span style="font-family: "trebuchet ms" , sans-serif;">Voila.

I'm mostly doing this so anyone who wants to keep up with our little family (in particular our adorable baby girl) can do so! I'll try to keep pictures up to date as well as back track a little for those of you who didn't get to experience Monkey Jr. from the beginning!
